Tropic Spice

Tropic Spice will be the newest venture on the long list of successes by Chef Collins, whose first restaurant concept, The Savannah, opened in 1997 in Hartford, Connecticut.

Collins and his partners, with substantial support from the community; built a 100-seat restaurant and bar specializing in eclectic cuisine with Southern contemporary interior design. The phenomenal success of this restaurant helped to launch the revitalization of a once neglected area of Hartford, CT.

In February 1999, Collins went on to join James Ferrara, to launch his second successful venture, America bar + restaurant in Tenafly, New Jersey. Collins was also the Executive Chef andPartner of Ida Mae Smoked BBQ and Tour Restaurant & Catering all located in Manhattan.

Chef Collins’ refers to his approach to cooking as multi-ethnic cuisine. According to him, the style of food he creates . The idea is to combine upscale traditional Asian and Caribbean classics. Taking simple dishes, he has transformed their methods of preparation and put a spin on the ingredients. The objective is to make the cuisine accessible to the masses–those who prefer fast food, while giving the classes who prefer to have more of a unique dining experience a respectable product, thus winning over both sides with consistency and customer service.
